Indulge in an extraordinary voyage of discovery, embarking on a truffle hunt and relishing a culinary feast alongside one of Alba’s illustrious truffle dynasties. Recently, fate smiled upon me as I ventured on a quest with a seasoned trifulau, a true virtuoso of truffle hunting, and his loyal companion Lola. Together, we unveiled the hidden treasures of the earth, unearthing seven exquisite white Alba truffles, which were later transformed into the family’s cherished tajarin and fried egg dishes. This truffle-seeking lineage, spanning four generations, generously shared their wealth of knowledge, divulging secret hunting grounds, tactics, and culinary prowess.
The exhilaration of the hunt, combined with the enchanting aroma of a freshly unearthed truffle, shall forever remain etched in my memory.
Truffles, a coveted luxury, often leave us mystified about their cultivation. The intricate interplay between trees and soil, with spores serving as catalysts for growth, assumes a paramount role. Humidity, location, soil composition, and climatic conditions are just a handful of factors that influence their bountiful yield. Over sixty diverse species of black truffles have been identified thus far. It is during the season of black truffle abundance that we embark on our hunts, spanning two to three expeditions each week.
White truffles, on the other hand, emerge as rarities, commanding higher prices and occurring in more limited quantities. Our preference lies in training young, white-coated canines, for they possess enhanced visibility during nocturnal excursions. Their tranquil temperament, obedience, and ease of training make females the preferred choice. To assess their truffle-inclination, we initiate training from their tender puppy days, enticing them with black truffles for play and consumption. Should their interest wane, motivating them for truffle-hunting endeavors becomes a formidable, if not impossible, task. Gradually, we mold them into expert hunters, redirecting their focus towards serving our truffle-seeking endeavors. The profound bond that we forge necessitates an arduous two-year journey of mutual comprehension.
Within this region, approximately 5,000 licensed hunters ply their trade, but countless more clandestine and unauthorized individuals partake in this secretive pursuit. With a valid license, the hunt can transpire across any terrain, even on private estates.
Spring showers assume pivotal significance, imbuing growth with vitality and occasionally hastening the truffle’s maturation. Should the truffle season appear lackluster, raindrops in August offer a glimmer of hope, portending a potential upswing. Although truffles demand years to develop and mature, the final stages of their growth exhibit astonishing swiftness, according to scientific research. We venture forth multiple times a day, eager to explore the same location that yielded truffle treasures merely hours ago.
